Why are spanish olives packaged in glass jars and black olives put in cans? I can't belive black olives would lose there color in a jar but maybe so. Let me know!

5 years ago Commented: Inspired by your question, I tried an expiriment. I opened a can of black olives and poured the contents into a drinking glass. I concluded that it is not attractive. It's kind of murky and dark and doesn't really look like food anymore. Just a theory at this point.

Green olives in jars for a good reason

Question: Why do black olives come in cans and green olives in a jar? Is there a reason, or is it just tradition?

Answer: It's not a tradition at all, says Margo Lloyd at Bell Carter Foods, a large West Coast olive processing house.

It's all a matter of how the olives need to be processed, she says.

“Black olives, technically known as black ripe olives, come in a can because we actually cook them in the can. Olives go in, a brine or juice is added, cans are sealed and they then go into a continuous cooker. Glass simply can't hold up to the intensity of the cooking process.”

Green olives, meanwhile, are processed differently — they're pasteurized but not cooked, then put in jars with brine added.

5 years ago Commented: A side issue - I was recently told by someone who should be an authority on the subject, that black olives are not naturally black, but chemically treated (apart from Kalamata olives, dark purple / brown). A colleague said "rubbish, of course black olives are naturally black when ripe". Who is correct?

5 years ago Commented: I think it has to do with the cost of the olives. I enjoy the more expensive jarred olives(green and kalmata mostly). It would be silly to put the cheap black olives in jars they don't bring in much anyway. I've noticed other products sell the more expensive brands typically in jars rather then cheaper packaging. I don't know if there is any truth to it, just what I have always assumed.

I couldnt find anything helpful to explain why such a thing occurs. But I thought you could get black olives in jars! Well I'm pretty sure u can here. Next time I go the shop I'll see if I can find some in a jar.

This link is the closest I could find to anything - link not all that helpful.

These olives are black and come in jars - link but are warned not to be bought lol.

5 years ago Commented: What I would like to know is why do that salt the hell out of green olives? They don't do that to black olives.
When I buy a jar of green olives I pour out the water and ad fresh water and shake it around. I do this 2-3 times, then I place water from my britta pitcher in there and let it sit in the fridge a few days. After that most of the salt is out and they taste better too!

I don't know why black olives are in cans and green ones aren't. I have actualy thought about that one before.

5 years ago Commented: Anne. Maybe green olives come in a jar because of oil. I don't know and tried to find an answer. What I did find is an interesting site of questions people ask, such as yours. No answers though.
